Quick and Easy Meatloaf

2 lbs. lean ground turkey
1C salsa
1C regular oatmeal
10T ketchup
Cooking spray
Muffin tin

Heat oven to 350. Coat cups of muffin tin with cooking spray and set aside. In a large mixing bowl, combine ground turkey, salsa, and oats. Form into 10 balls and place in muffin tin. Top each mini loaf with 1T of ketchup and bake for 15 – 20 minutes (baking times may vary between ovens). Serves 10. Per serving: 136.9 calories, 22.3g protein, 7.9g carbs, and 1.8g fat

Blarney Cooler

2 Scoops Apex Vanilla Fit Mix
10 oz. Skim Milk or Soy Milk
1/2 Small Can Dole Pineapple Tidbits – with juice
2T Sugar Free Lime Jello Powder
Ice 

Blend together and pucker up!!! 

Allotta Collatta

2 Scoops Apex Vanilla Fit Mix
8 oz. Skim Milk or Soy Milk
1 small can pineapple (with juice)
2T Coconut Extract
Ice
